As all dwellers around MARE NOSTRUM (the Mediterranean Sea) know, the fruit of the olive tree is not only used for making olive oil. Olives can also be eaten once they have been previously treated. The olive is also a part of the culinary culture of the Mediterranean diet. A salad without a handful of olives on top is not a real salad. They are used in all sorts of dishes; raw as well as cooked. Any occasion is a good one to bring out a little dish of olives to lessen the hunger pangs and make the wait for lunch just that bit shorter – as many restaurants know.

Even though most of the Arbequine olives go into making olive oil, many people in the olive-growing zones keep some to cure and to eat at home. In many homes you can find jars and pots of olives for eating.
