There are many different recipes for making olives in conserve.

Once the olives have been picked, they are cleaned and put in clear water for 9 days, changing the water once a day. Some people also add caustic soda during this process so that the olives are ready more quickly. On the tenth day, another water mix is prepared which contains 9 x 1, or in other words, nine measures of water for one of salt. We also add some twigs of thyme, winter savoury or some people even add fennel. After about three months they are ready for consumption.
